Spice Blends

Indian cuisine is well known for its distinctive taste and flavor. Every region in India has it's unique style of cooking and the secret behind is the use of spice blends, typically known as ‘Masala’. Spice blends or 'masalas' are the heart of Indian cusine. There are as many masalas as there are recipes.

Mixture of particular spice in a proportion is very important in making spice blends. People often prefer to make their own traditional spice blends needed for the specific recipe. The ingredients vary from region to region, north to south, east to west.

Some commonly used spices to make spice blends are red chilies, coriander seeds, cumin seeds, black mustard seeds, black peppercorn, fenugreek seeds, curry or bay leaves, ginger, turmeric, clove.
