Ragda Patties

Ingredients

for ragda

1 cup whole yellow peas (vatana), 1 finely chopped onion, garlic-ginger paste (½ inch ginger, 3-4 garlic cloves), ¼ tbsp tamarind paste, 1 stick cinnamon, ½ tbsp garam masala powder, ¼  tbsp chili powder, ½ tbsp sugar/ jaggery. Pinch of turmeric powder, 1 tbsp coriander powder and cumin powder, 4-5 tbsp oil, pinch of mustard seeds, pinch of cumin seeds, salt to taste                                                    .

For patties

3-4 boiled potatoes, ¼ tbsp mango powder, ¼ tbsp. red chili powder, 2-3 bread slices (for crispiness), butter (amul butter recommended) for shallow frying, salt to taste.

For Sweet chutney - ¼ cup jaggery, 2 tbsp tamarind paste, ½ cup soft dates (deseeded)

Green chutney - 1 bunch of coriander leaves, 4-5 mint leaves, 2 green chilies chopped, 1 tbsp cumin seeds, salt to taste.

For garnishing - Finely chopped onion, chopped coriander, sev, (optional)

How to make

Chutney

  • Sweet chutney- Blend all the chutney ingredients in a blender until smooth. Taste for sweetness and sourness according to your taste. The chutney should be more on the sweeter side than sour. Remove in a dipping dish.  
  • Green chutney – blend all ingredients in a blender to make fine paste.

Tips- make chutneys ahead of time and keep refrigerated.

Ragada

  • Allow yellow peas to soak overnight and drain all the water next day.
  • Pressure cook peas by adding 3 -4 cups of water, pinch of turmeric, cinnamon stick, and salt
  • Heat oil in a pan and add mustard seeds followed by ginger garlic paste.
  • Now add chopped onion. Sauté till onion turns pink or transparent.
  • Add pinch of turmeric powder, chili powder.
  • Now add cooked yellow peas along with water.
  • Mix it well and bring it to boil.
  • Add 1 more cup of water.
  • Now add tamarind paste, garam masala powder, coriander-cumin powder, sugar to taste.
  • Boil till desired consistency.
  • Ragda is ready

 Patties

  • Mash boiled potatoes and add mango powder, chili powder and salt to taste.
  • Mix it well and make patties.
  • Keep bread powder ready.
  • Heat the skillet and spread amul butter allover.
  • Dip patties in bread powder one by one.
  • Arrange all the patties on skillet/ tava and shallow fry both the sides till golden brown and crisp
  • Patties are ready.

Serving ragda patties

  • Place 2 patties in a serving dish and pour ragda on the top.
  • Add sweet and green (spicy) chutneys according to your taste and add onion.
  • Garnish with coriander leaves and sev.
  • while serving, ragda and patties should be hot.
