Kanda Batata Rasaa/Onion -Potato Curry
Ingredients
Two potatoes(chopped), 2 onions(chopped), 1 tbsp. goda masala/black maharashtrian masala, 1-2 tbsp jaggery, 3-4 curry leaves, 2 halves of dried kokam or 1 tomato, 1tbsp chili powder, peanut powder, pinch of turmeric pwd, 3 cups of water, fresh grated coconut and coriander leaves for garnishing, salt to test.
For tempering: 3-4 tbsp vegetable oil, pinch of mustard and cumin seeds, hing/ asafetida
How to make
- Heat oil in a pan and add pinch of mustard and cumin seeds followed by hing.
- When seeds start cracking, add onion and fry till onion turns transparent or pink.
- Add pinch of turmeric pwd and add chili powder.
- Add chopped potatoes.
- Fry for few seconds and add water.
- Bring to boil.
- Now add goda masala, peanut powder and kokam, jaggery .
- Let it boil till potato gets cook.
- Add salt to taste.
- Boil upto desired consistency.( it should not be too watery.)
- Garnish with fresh grated coconut and coriander leaves.
- Serv hot with rice.
