Vangyache kaap/eggplant fritters

Ingredients

1 big eggpant

For mixture-1 cup gram flour/besan, ½ cup rice flour, 1 tbsp coriander powder, ½ tbsp cumin powder, pinch of turmeric powder, 2 tbsp semolina(rava), pinch of ajwayan (ova, bishops weed), ½ tbsp chili powder.

Oil for shallow frying.

How to make

  • Cut eggplant into thin slices and deep them in salty water for 5-10 min.
  • Meanwhile mix all ingredients given under label mixture.
  • Do not add water to mixture.
  • Now drain water from eggplant slices and wipe them up with kitchen towels.
  • Deep each slice one by one and coat all slices on both sides with the flour mix.
  • Heat skillet and put some oil.
  • Arrange slices on skillet and shallow fry them on both sides till crisp and brown.
