Vangyache kaap/eggplant fritters
Ingredients
1 big eggpant
For mixture-1 cup gram flour/besan, ½ cup rice flour, 1 tbsp coriander powder, ½ tbsp cumin powder, pinch of turmeric powder, 2 tbsp semolina(rava), pinch of ajwayan (ova, bishops weed), ½ tbsp chili powder.
Oil for shallow frying.
How to make
- Cut eggplant into thin slices and deep them in salty water for 5-10 min.
- Meanwhile mix all ingredients given under label mixture.
- Do not add water to mixture.
- Now drain water from eggplant slices and wipe them up with kitchen towels.
- Deep each slice one by one and coat all slices on both sides with the flour mix.
- Heat skillet and put some oil.
- Arrange slices on skillet and shallow fry them on both sides till crisp and brown.
