Dodkyacha Salachi Chutney/Ridge Gourd Chutney
Ingredients
2 tender dodke/ridge gourds, 2 green chilies (chopped), 1 tbsp red chili powder, pinch of termeric powder, coriander leaves (chopped), pinch of asafetida, pinch of mustard and cumin seeds, 2-3 tbsp oil, 1 tbsp black sesame seeds, 5 tbsp dried grated coconut, salt, sugar, tamarind to taste.
How to make
- Wash dodka/ridge gourd and peel off the skin.
- Let it dry for some time and chop finely.
- Heat oil in a pan, add mustard and jeera seeds followed by hing.
- Add green chilies and chopped skin of dodka/ridge gourd.
- Add a pinch of termeric powder and chili powder.
- Fry for few seconds.
- Put black seasame seeds and grated dried coconut.
- Fry on low heat till mixture turns light brown.
- Add salt sugar and tamarind paste as per taste, add coriander leaves.
- Turn off the heat and cool the mixture.
- Put it in blender and make a paste.
- Transfer into suitable container.
