Dodkyacha Salachi Chutney/Ridge Gourd Chutney

Ingredients

2 tender dodke/ridge gourds, 2 green chilies (chopped), 1 tbsp red chili powder, pinch of termeric powder, coriander leaves (chopped), pinch of asafetida, pinch of mustard and cumin seeds, 2-3 tbsp oil, 1 tbsp black sesame seeds, 5 tbsp dried grated coconut, salt, sugar, tamarind to taste.

How to make

  • Wash dodka/ridge gourd and peel off the skin.
  • Let it dry for some time and chop finely.
  • Heat oil in a pan, add mustard and jeera seeds followed by hing.
  • Add green chilies and chopped skin of dodka/ridge gourd.
  • Add a pinch of termeric powder and chili powder.
  • Fry for few seconds.
  • Put black seasame seeds and grated dried coconut.
  • Fry on low heat till mixture turns light brown.
  • Add salt sugar and tamarind paste as per taste, add coriander leaves.
  • Turn off the heat and cool the mixture.
  • Put it in blender and make a paste.
  • Transfer into suitable container.
